Traditional French Wedding Cake Croquembouche

A croquembouche is a French pastry that is often served at weddings, baptisms, and first communions. It is a high cone of choux filled with pastry cream that is dipped in, bound and decorated with threads of caramel.  The name comes from the French words croque en bouche meaning 'crunch in the mouth'.

We had the honor of making this wedding cake recently.
